Prashanth Puttaswamy is the Executive Sous Chef at The Fatty Bao.
Chef Prashanth started his career a decade ago with a series of industrial training in star hotels including Taj Westend, Windsor Manor and Lalit Ashok Bangalore. A keen interest in standalone restaurants lead him to join the newly launched Bangalore Bistro in 2001, which focused on European cuisine. This gave him an insight into dealing with ingredients and the day-to-day operation of a restaurant. With 2 years of experience under his belt, Prashanth moved to Bice in Dubai, which then had the distinction of being the best Italian restaurant in the Middle East. This opportunity gave him hands-on experience in dealing with traditional Italian cuisine.
Having been bitten by the travel bug, Prashant joined Celebrity Cruises and addressed the twin itches of travel and cooking for large numbers. In 2004, he became part of the pre-opening team of Olive Beach, Bangalore, headed by Chef Manu Chandra. Since then he has learned the art of cooking with modern techniques, fresh ingredients and understanding flavors. He has worked alongside Chef Manu Chandra on planning menus and doing food promotions. Almost 8 years later, Prashanth moved to LikeThatOnly with the responsibility to head a kitchen and work with new cuisines.
Prashant has a Bachelor’s Degree in Hotel Management from Bangalore University. He has always loved food with different flavors and ingredients and prefers fresh, simple ingredients with bold flavors and food influenced by Mediterranean cuisine and Asian flavors. He borrows and interprets cooking styles and techniques from many cultures that lead to the creation of new and different dishes that incorporate various ingredients.
