Evan is the only chef we know who won ‘chef of the month’ eight times over in one year! He started his career in London, before heading to Sydney. In 2003, Evan joined Olive Bar & Kitchen, Mumbai as the Executive Chef – a role he held for three wonderful, food-filled years.

Evan’s ethos is simple. He likes to use modern techniques but not at the expense of classical methods which have stood the test of time. Fish and seafood are his real passion. He says, ‘The freshness and variety available here is rarely matched elsewhere in India. Something about Goa inspires me every day.’

Evan was instrumental in encouraging Olive’s modern Mediterranean edge, and now continues to do so at Olive Goa, using his experience, skill, and knowledge to create dishes that appeal to westerners and Indians alike. Olive Goa’s menu, created in the mentorship of Chef Manu Chandra, represents the best of Goa, using local ingredients and recipes with European methods and approaches.
